Apple Cake

This is a recipe I found on Pinterest, a.k.a. my new obsession.  The cake was really moist and tasty.  I cut back on some of the spice the original recipe called for and I'm glad I did because the cinnamon and nutmeg was noticeable, but not overwhelming.  I made this cake with the apples that I picked last weekend at Lindsey's (mostly Empire apples and some Fuji).  Here is my apple haul:

 
Apple cake

Ingredients

Cake:
2 eggs
2/3 C oil
1/3 C unsweetened applesauce
3/4 C white sugar
3/4 C brown sugar
1 tsp vanilla extract
2 C flour
2 tsp ground cinnamon
1/2 tsp each ground ginger & nutmeg
1 tsp baking soda
1/2 tsp salt
4 C peeled, cored & diced apples (measure after prepping - I used 5 Empire apples)

Glaze:
1 tsp ground cinnamon
2 1/2 C confectioner's sugar
3 T milk
1 tsp vanilla extract

Directions

Preheat oven to 350 degrees F. Grease and flour one Bundt pan. In a medium bowl, whisk together flour, spices, baking soda and salt. Beat oil, applesauce and eggs with an electric whisk or mixer until creamy. Add sugar and vanilla, mix until uniform. Add flour mixture to wet mixture in batches, gently stirring to incorporate after each one. Fold in apples. Spread batter in prepared Bundt pan. Bake for 55 minutes, or until a toothpick inserted comes out clean. Allow to cool in the pan 10 minutes, then invert onto a wire rack to cool completely.

For the glaze, whisk all ingredients together until smooth and shiny. Add additional sugar if mixture seems too runny, or a splash more milk if it gets too thick. Place cake on wire rack over a large plate or tray to catch drippings, then slowly pour glaze over top. Allow to set completely, then transfer cake to a plate for serving.

  2. The apple cake looks and sound delicious. I checked out Pinterest and see why you're obsessed with it! I was just staring in amazement what people think of to organize their stuff! I have to go back to see the recipes! I'm almost done with Confections of a Closet Master Baker. Every time I read another chapter, I have to stop & bake something! The Blueberry Scones you made look amazing too! Oh boy Cait, I can't wait to see what you'll post during Christmas!!
